We do a stir fry of veggies and cook the bulgur with chickpeas separately, then serve it together. I sometimes add a squeeze of lemon and sriracha to zest it up after plating.

Love this hot or cold spread on a warm whole wheat pita.
Serve with low fat shredded cheese or a dollop of fat free sour cream, and baked tostitos for dipping/scooping.
