This is a simple and tasty breakfast, you can add bacon or sausage or any other type of meat, if you want some added protein.
I found this recipe online while trying to figure out what to do with some bananas that were going bad, other than the usual banana bread or smoothie. I modified it to be a little healthier (the original wanted 1 cup of sugar!) and a little creamier with some more flavor.
Easy to make, and easy to vary, these muffins are great for snacks or appetizers.
