this is just something I put together to get vegetables in the kids. You can put pretty much any group of veggies you like in it. But it needs to be loaded with veggies to keep the carb count in tact.
I found this recipe on cooks.com, so I can not take any credit for it. I like adding it to steak or chicken fajitas.
This is a quick and easy lunch salad. The apple gives it a slight sweet tang without the sugary relish and works in a fruit!
