Whole Grain Waffles

These waffles are delicious and light. Serve them with warm maple syrup or fresh berries if you like. I like to top them with low-fat yogurt and a few fresh berries.

Bolognese Sauce

I found this recipe in a magazine and lightened it up a bit, using chicken broth instead of wine, 98% lean ground beef and I added frozen peas for a little color. It was a hit.

Low-fat Macaroni & Cheese

This macaroni and cheese dish is creamy and cheesy and full of flavor...you'd never know it was low fat. Definitely a good for you comfort food. Sometimes I even toss is some frozen broccoli before putting it in the oven. No leftovers from this tasty dish!

Veggie White Pizza

I just love white pizza so I tried to come up with a healthy version loaded with veggies. You can put just about any veggies you want on this, zucchini, onion, summer squash, spinach...play with it to your liking.

Enchilada Casserole

This was a recent recipe in Taste of Homes "Healthy Cooking" that I revamped to make even lighter and healthier. I substituted ground turkey for the beef and used fat free sour cream and cheese instead of reduced fat, which cut 90 calories from their light version. The results were fabulous and a hit with my whole family. Proof that low fat can taste good!

I love pancakes. I like to experiment with recipes to make them lighter and healthier so I can enjoy them without feeling guilty. Here's a recipe I lightened up. It was a hit with my family.

Low fat Pumpkin Muffins

Makes me feel like I'm having something naughty. These muffins satisfy my sweet tooth and my love for pumpkin. Low fat and yummy.

Sweet Potatoe Fries

These are really yummy and much better for you than regular french fries and half the calories.

"whopper jr."

I love whopper jr.'s so I came up with my healthier version and was able to cut 60 calories from Burger Kings version.

Low-fat Granola

This is a really versatile granola recipe and it tastes awesome. You can add different nuts, and dried fruits to your taste. If you like different flavorings you can add that to your syrup mixture, (ex. almond extract, vanilla, ginger, nutmeg.) You don't have to add chocolate chips if you don't want to. White chocolate chips, peanut butter chips, m&m's etc. are all good too...or nothing at all. Have fun with it.

Multigrain Pancakes

These pancakes are incredible...it's hard to believe they are good for you. My kids even like them. For variety, sometimes I sprinkle them with pecans or walnuts, or blueberries before I flip them. As an alternative to maple syrup, I put Smucker's sugar free jam in the microwave to melt it a bit and then pour a few tablespoons over my pancakes...yummo!

15 Bean Soup

Full of fiber and a good source of protein...not alot of calories. Great with a salad.
