Spaghetti with Garlic and Oil is an Italian staple, but is very high in fat. Our family recipe cuts the fat significantly, substituting chicken bouillon for the additional oil after the garlic and spices have been sauteed in 2T of olive oil. We enjoy this as a side dish to a piece of grilled fish or chicken and a garden salad.
Growing up in Brooklyn, the best meals were those made by my Nana Marge. She was born of Irish parents, married an Italian, and her meals became the standard by which I have since compared all Italian fare. This updated low-fat version of Nana Marge's Pasta Fagioli (pasta with beans) is a remarkably delicious dish, and captures all the pleasure of her original recipe. I like to use hot Italian turkey sausage as a replacement for the hot Italian pork sausage that Nana Marge would sometimes add to the mix. The dish can certainly be made without, for those who prefer a meatless dish. And no, there's no missing ingredient...she never used tomatoes. Enjoy!
This is my take on Costco's incredibly yummy Cilantro Lime Shrimp. I like mine with lots of garlic and spicy. You can tone yours down by using less garlic and crushed red pepper. Enjoy!
Not only is this smoothie super delicious, it's also FILLING. Our family routinely enjoys a dish of fresh fruit and yogurt after our evening meal. As an alternative, we'll often have this smoothie. It's a big winner here in our home!
I've been preparing this pasta salad for many years, only recently substituting Barilla multi-grain for the plain variety. Whichever type of pasta you use, it's a sure-fire crowd pleaser - one that's chock full of fresh veggies! I like it with just a drop or two of Frank's Hot Sauce added to the mix, but you can leave it out, if you prefer. The recipe is a standard around our household as a spring and summer side dish accompaniment to everything from grilled mahi mahi to hot dogs - the family loves it! I find that the juices from the vegetables make the 6 T of mayo stretch! One final note: It's especially pretty and colorful when served on a bed of romaine or fresh spinach!
baked mexican-spiced tilapia in foil....easy and delicous!
This is such a colorful and comforting dish, and it's super fast to the table! Serve over Quick Brown Rice, and you've got a wholesome and tasty meal.
This recipe for brown rice comes from Saveur Magazine online (www.saveur.com), and is prepared much in the same way as pasta! Whodda thunk? It turns out perfectly cooked brown rice every single time. No more sticky wallpaper paste masquerading as brown rice - just perfect grains, perfectly prepared, every single time. Save time by cooking up a large batch for use later in the week!
