Use leftover rice or pre-cook the rice and allow to cool. I also tend to use left over pork or pre-cook the pork before making the fried rice, allowing it to cool. Cook the mixed vegetables and drain of water.
Best served over rice.
You can also add chopped celery or carrots.
You can top with cheese (low fat), sour cream (low fat), scallions if you wish.
