This is so good, awesome leftover and so easy and fast to make. Great way to hide veggies

Brenda's Chow Mein Noodle Casserole

This is great leftover too.
Chow Mein Noodles are not great noodles for being low in fat. Try to find a brand that contains little oil and shortening. This is a nice treat when you are craving chinese food.
It would also be less calories if you used Ground Turkey (I have not yet tried that)

Brenda's Shrimp & Imitation Crab Enchiladas

This is a converted recipe from Cooks.com
I used Dempsters Smart Whole Grain Tortillas which reduced the calories.

I also reduced the cheese by 1/3 of a cup from the original recipe.

Brenda's Creamy Chicken Ricearoni Casserole

This is a regular in our house. Great leftover (if there is any).

This freezes well too just omit corn flake crumbs. Thaw overnight in the fridge. Then add the crumbs and bake.

Brenda's Mexican Lasagna

This is really satisfying. I bet you could reduce the calories even more by using ground turkey or ground chicken. This is based on ground beef. You could also use flour tortillas too.

Wicked Cheeseburger Soup

This is so good, you gotta be careful because it is kinda high in calories. The key is Emmeril's Essense I use this seasoning in everything. The soup It freezes well and tastes even better the next day. Emmeril's can be purchased in the spice section of the grocery store. You can get the recipe on line too.

Mock Mashed Potato Casserole

Makes about 8 - 3/4 cup servings.
This is so delicious. Great for pot lucks and an awesome way to get your family to eat Cauliflower...even picky cauliflower haters love this dish. It is also good the next day and reheats well. Tastes just like stuffed baked potatoes. I have taken this to lots of pot luck dinners and there is never any leftover.
