You could substitute whatever fresh vegetables you have on hand for this. I used a pattypan squash, broccoli and greens from my local CSA.
This soup can easily be adjusted to be vegetarian or vegan. It's very flavorful, quick and inexpensive.
Peel, core and shred the apple.
Combine dry ingredients into a large bowl and stir together. Add wet ingredients to the dry ingredients.
Mix all ingredients together. Batter will be lumpy. Put into muffin cups or small loaf pans, about 2/3 full. Bake at 400 for approximately 20 minutes.
