Ground Turkey Enchiladas

A rough recipe for my enchiladas. Ingredients change depending on what's on sale, what's in season, etc. Could be made vegetarian by omitting the ground turkey.

Chicken with Granola

Combine the following:
1 chicken breast, boiled and diced, 1 cup shredded lowfat cheddar cheese, 1 can cream of chicken soup, 1 chopped onion, cup milk, 1 cup diced celery, and dash of pepper.

In separate bowl, mix 1 cup granola and 2 tablespoons coconut oil. Reserve some granola for the top.

Mix remainder in with chicken mixture. Pour on reserved portion.

Bake at 325 degrees for 20 minutes.
