A rough recipe for my enchiladas. Ingredients change depending on what's on sale, what's in season, etc. Could be made vegetarian by omitting the ground turkey.
You can choose to eat these on a bun with condiments, or on their own, crab-cake style. They are also delicious cold the next day.
Combine the following:
1 chicken breast, boiled and diced, 1 cup shredded lowfat cheddar cheese, 1 can cream of chicken soup, 1 chopped onion, ¼ cup milk, 1 cup diced celery, and dash of pepper.
In separate bowl, mix 1 cup granola and 2 tablespoons butter. Reserve some granola for the top.
Mix remainder in with chicken mixture. Pour on reserved portion.
Bake at 325 degrees for 20 minutes.
