Recipes I've Shared:
A rough recipe for my enchiladas. Ingredients change depending on what's on sale, what's in season, etc. Could be made vegetarian by omitting the ground turkey.
Combine the following:
1 chicken breast, boiled and diced, 1 cup shredded lowfat cheddar cheese, 1 can cream of chicken soup, 1 chopped onion, ¼ cup milk, 1 cup diced celery, and dash of pepper.
In separate bowl, mix 1 cup granola and 2 tablespoons coconut oil. Reserve some granola for the top.
Mix remainder in with chicken mixture. Pour on reserved portion.
Bake at 325 degrees for 20 minutes.
