Chicken Casserole

I got this recipe from my dad, he made this casserole to use up left over chicken. I like to divide it into 3 smaller pans and freeze before cooking for a quick meal on busy days. Just take out of the freezer and pop in the oven for 30 minutes.

Chocolate Mint Pudding

Found this recipe in AllYou magazine and modified it slightly. It is a nice light mint flavored chocolate pudding.

This is really two recipes. I make rice pilaf and use the left over to make spanish rice.

Steamed California Blend Vegetables

I like to sprinkle Butter Buds on these instead of salt which adds 5 calories per tsp used.

This is a nice thick sauce with a flavor that is not overpowering. I like to serve it over spaghetti squash.

Fudgy Brownies

I like to store these in the freezer in individual servings.

White Bean and Chicken Chili

I got this recipe from AllYou Magazine and modified it a bit. I like to serve with corn bread and fresh celery.
