I was experimenting to re-create a healthy version of Noodles & Co's Buttered Noodles. Here's what I came up with ... I add some grilled chicken to round it out, but have not included it in the recipe.

This was my MIL's recipe that I switched healthier choices for. This recipe is a double batch. It freezes well to cook up at a later time also.
