This is the recipe found on the back of the box, but modified using healthier crumbs, egg beaters and 93% Lean Ground Turkey.
(this is traditionally made with white rice and chicken without the skin, but I had to make it somewhat healthier..)
Crunch and Cheesy - nice use of leftover Spaghetti and a nice change for a breakfast meal
Needed something smaller than the larger corn tortillas. Found a pack of Pepito's Corn Tortillas with a TON of tortillas in them.
This is an awesome low carb side dish, with healthy fats. You can always substitute the Blue Cheese for Feta Cheese if you prefer one over the other. For an extra treat thrown in some Cranberries...Yummmm
NOTE: I use Splenda Brown Sugar for this. And even though the recipe has been entered at making 6 servings. I find it makes more like 8 - so I will entere in .75 servings when I add this to my daily food diary.
This was pulled off the the Campbell's Soup Fat Free Brown Gravy can. It is a quick and easy (somewhat low-fat) dinner.
I did not add the rice to this recipe content since many people use different varieties of rice and/or pasta.
