Tastes like a fresh blueberry pancake in a bowl!
I created this recipe based on a Buckwheat cereal recipe from Tosca Reno's Clean Eating Cookbook. Tastes like a warm, soft, blueberry muffin in a bowl with a good dose of protein and fiber.
Inspired by Jamie Eason's LiveFit Program. I needed an oatmeal option that was tasty yet followed the program. Here it is!
I love this breakfast! The banana gives it just the right amount of sweetness and the vanilla soy milk adds to the wonderful aroma. I actually just add all the ingredients to the heated soy milk in the morning and take it to work with me. It cooks on its own in my bag and then I just heat it up at work. Delicious and good for you!!
I make this at the office when I forget to pack a lunch. You can pick up all the ingredients at a local deli or cafe. The only thing you have to pay for is the eggs! Starbucks usually has hard boiled eggs available for purchase.
A low fat take on my Nana's meatloaf recipe. I always found that the oatmeal made the meatloaf moist and tender.
Easy, fluffy and good.
