This pie/tart recipe is the culmination of a number of culinary experiments as I sought to design the best low-carb, sugar-free dessert to wow my relatives with at Christmas! I am very happy with this, and I hope you will enjoy it too. A VERY decadent treat for a surprisingly low amount of calories (all things considered), still avoiding the blood-sugar spikes caused by grains and refined sugars. Christmas cheer without the cramps and crankiness!

A decadent primal/paleo treat of which Grok would heartily approve! I like my choc treats very very dark, and nutty! You can add sweeteners if you don't like your choc too sinful.

These muffins are a fantastic primal treat for those of us who like to use only the ingredients evolution enabled us to eat - no dairy, grains, sugar or industrially processed ingredients.
I use a small amount of cocoa in mine since I like to eat them with coconut cream and berries, so I don't need to add any sweetness to the mix itself. The muffins are almost a savoury cinnamon with a gorgeous almond aroma. Feel free to experiment with berries in the mix itself, or honey, or other sweetening / flavouring agents. This is a low-carb, low-calorie version of a lemon ricotta Italian Easter pie. This is a crustless "pie", but is very similar in flavor and texture (minus the crust). Whole milk ricotta is preferred for this recipe. Part-skim can be used, but the pie comes out grainier and more crumbly.

Nutritional information does not include sweetener as it will depend on what you use - I use erythritol which does not affect blood sugar, therefore it doesn't count as effective carb grams.
I also have not calculated toppings as it's chef's choice!

For my 24th birthday, I wanted to make a new (to me) kind of jelly cheesecake - mint! All the fruit flavours of sugar-free jelly were boring me, so I decided to experiment with peppermint oil... Worked a treat!

This is what I whipped up this morning for my sweetie. I wanted to make something low in carbs but sweet enough for him to enjoy (although he still added a splash of maple syrup to his - once a Canadian...)
I wanted to make a cheese omlette with pizza topping as filler, but ran out of cream. What I did have in my fridge was cream cheese, and decided to make a frittata instead...
My first experiment with chicken nuggets... They fell apart, so I might need more mayo or more 'something else'... They worked well as BIG nuggets to be eaten with forks. Still sooo yum!
This is my first cheesecake experiment. I was aiming for cheesecakes the size of mini-muffins that each held 1 gram of effective carbohydrate. Success! However, next time I will scrap the base, as this is where the carbs lie, and the base really isn't necessary. It's tasty, but it leaves so little room for the actual cheesecake!
Walnuts and a touch of cinnamon dress up your everyday tuna salad. It's tastier when the walnuts are toasted, but I don't always take the time.

After eliminating breads from my diet, I still missed the taste of garlic bread. Now I've created an easy, low-carb alternative that fills that void!
