I love the baked squash at Dixie Cafe and found a copy-cat recipe online. It called for whole eggs, butter and sugar, so I adapted the recipe to make it diet friendly. It tasted exactly like DC's. Buttery, sweet creamy/crunchy comfort food!
Easy casserole, especially good for potlucks! Created on the fly with ingredients on hand... would surely be better/healthier with fresh veggies and chicken breasts, but this beggar's no chooser. :) I was only going to calculate for my own information, but it was really tasty so I thought I'd share!
Unusual in that they're slightly flavored with cinnamon and lemon. Wonderful served over orzo.

This recipe is quick and easy! I think the most important thing to consider when counting calories in this dish is the SAUCE you use. I used Target's brand, Archer Farms-- others I found in the food database were considerably higher in fat and calories. If you use a different brand, try to find something comparable to 70 cal/ 6g fat per 1/4 cup.
It never fails... no matter how early I get out of bed, I'm always in a mad rush to get out the door on time. I threw this together one such morning and found them delightful-- quick, portable, tasty... and just filling enough to start my day right!
Actually, this is just a modification of another Spark recipe, Kickin' Creamy Chicken Stew. (My apologies to Aprildawn678!) We added loads of garlic and other veggies, used fat-free cream cheese (and more of it!), cut back on the chicken and spiced it up a bit.
