I love mac-n-cheese like everyone else but I know that the boxed kind is not as healthy and also has little comparison in taste.
I altered a recipe from Cooking Yourself Thin because I use tofu with recipes like this to increase protein and reduce fat.
I add in ground almonds to my oatmeal to give extra protein. You certainly can omit this or try a different nut, chopped or ground. Any alterations will change the nutritional value of the recipe, however,
Yogurt made sweet without sugar!
You can eat the whole recipe or divide in half for less calories!
No sugar or oil!!! Lecithin replaces oil!!
I make this recipe and keep the dry mix on hand for when I want to make pancakes in the morning. Having all of the dry ingredients pre-mixed cuts down on the time to cook in the morning before work.
This is my favorite cookie from my childhood! It is perfect if you cannot eat a cookie made with eggs or milk because it uses neither of the two.
Just a hair over 80 calories and a mere 1 gram of fat per muffin!
Makes one loaf- about 14 slices (Less than 90 calories and only 1 gram of fat per slice)
Just over 60 calories and less than a gram of fat for a slice of bread!
These waffles require no sugar or sugar substitute!! The Lecithin allows you to use no oil which greatly reduces the calories and fat!!

I categorized this as a vegetarian side dish because I allow chicken seasoning in my vegetarian diet.
If you do not want to use chicken seasoning, use nutritional yeast flakes (yellow in color, high in protein, and something I will substitute for chicken seasoning).
