Brunswick stew without all the fat, but with a ton of flavor
I stole this recipe off the internet and made it low-carb by using splenda and omitting the flour and crust. Bake in foil lined pan.
This is my best foray into a salmon dish without any bread ingredients or rice ingredients and still full of vegetables and vitamins. This is Atkins and Low-Carb friendly, although pretty steep on fat and sodium content. You can easily adjust the cheese content and those will adjust rapidly as well.

These pancakes are delicious and this recipe includes butter and sugar-free syrup with the nutritional info. These are very filling, low in fat and sodium, and have great fiber content! Vegetarian except for dairy ingredients.
This is a low fat and filling tuna salad that I eat with crackers or on a sandwich.

This dish is a great formal appetizer and a hit at all of my dinner parties where it is served. This is my original receipe and my take on the traditional "heavy" favorite- Shrimp & Grits. Salute!
