My husband and I really enjoy this meal. I reduced the amount of chicken thighs the original recipe called for from 4 lbs, to 5 thighs and kept the sauce and added an extra 1/4 cup of each vegetable. In the past I have added some potatoes. if its to hot and you aren't making coconut rice, i suggest adding brown sugar to balance out the heat of the chipotle pepper. Tastes great served with coconut rice with beans.
I make alterations to this recipe all the time to accomodate my family's needs or tastes. The original recipe i found calls for red beans. We thought black beans would be better considering the use of coconut milk. I usually use lite coconut milk and adjust the sweetness to taste because I find regular coconut milk to be way to sweet.
