So good, and actually good for you. Strawberries can be substituted for whatever fruit you like! I got 12 regular muffins out of these plus 16 mini muffins.
I call these "brainy" because of al the omega-3 fatty acids in them. These are super yummy! Soft, chewy, low in calories and fat, and higher in fibre! Make them with Omega 3 eggs, ground flaxseed and margarine with flaxseed oil. Give these to your kids with confidence (and make a double batch because they'll eat them up!
