This is based on Ellie Krieger's Nutty Sweet Potato Soup. I was too lazy to print out the recipe so went from memory and changed a couple of bits as I went along.

I put these on my blog a while back and they have become one of my favourite uses for the okara leftover from making soymilk. If you don't have a soymilk machine though, you could substitute whizzed up cannelini beans.
I know there are a tonne of hummus recipes out there, but whenever I've made them, they always taste too strongly of tahini for my liking - i'm not a fan. So here's my version.
