This is amazing on its own, or with plain greek yogurt for a comforting snack.
Really simple, easy and delicious - change out the eggs for egg substitute, the sugar for splenda, and the results are just as tasty!

Anasazi beans are similar to a pinto bean, and are a good source of iron, calcium and protein.
This is a really delicious alternative to that boring bowl of oats. Not only can it be prepped beforehand in no time, but it can be eaten hot or cold, on its own or in a bowl with some milk and brown sugar (should you desire).
For a change of pace, add in mashed banana, apple, berries, raisins, nuts or chocolate chips - the possibilities are endless!
Note: if using sugar-free applesauce instead of apple butter, up the Splenda to 1 1/2 cups. This can also be prepped beforehand and refrigerated overnight, then baked.
The beauty of this meal is that it can be customized to suit your tastes - feel free to play around with the salad components, such as switching mandarin oranges for the pineapple, or adding chopped peanuts or fresh herbs, such as basil, mint or scallions. For protein, thinly sliced beef or chicken would be nice, as would baked tofu, sausage or shrimp.
Also, it can be made ahead of time by making the dressing, and cutting up the ingredients. When it's time to serve combine everything together, and it'll come together in less than 5 minutes!
