Good way to get in lots of protein and veggies, and it makes a quick lunch/dinner/breakfast!
This is one of those dishes you can make huge batches of for a dinner party, or when you know you're not going to have time during the week. It's good really hot, cold, with bulgur wheat instead of rice, or white rice, and with more lentils. Very versatile, easy and incredibly satisfying.
This is my mom's recipe, and is therefore not the most accurate in measurements, so be creative, and don't be afraid to keep tasting.
