This is a perfect dish to have during Lent for meatless-Friday meals or a vegetarian meal anytime.
This was a recipe i got from Eating Well magazine. I made a few small adjustments to suit my tastebuds.
I got this recipe after ordering Tom Venuto's e-book, "Burn the Fat, Feed the Muscle". It sounded interesting and it turned out to be quite tasty as well!
I found this recipe on Dr Andrew Weil's website. It is amazing! No eggs, no refined sugar and it can easily become a vegan recipe by substituting agave nectar for the honey.
The original recipe I found in "Taste of Home: Healthy Cooking" magazine, however, I made some modifications to suit my tastebuds. This is a wonderfully refreshing dish perfect for summer BBQs and picnics. It's a great, healthy alternative to the traditional fatty mayo based salads.
