These are easy to fix and good nutritionally. You can prepare this dinner quickly and satisfy everyone. I served it with refried beans on the side. I used chipotle hummus once and another time olive oil and garlic hummus. Both were good. To save on calories, use 1/8 an avocado instead of 1/4 as in the recipe. You could also eliminate the chicken if you prefer a vegetarian dish or to further reduce calories.
