Got some leftover black-eyed peas form New Yearís Day? Use them up in this tasty spread that mimics a pate.
Totally arbitrarily decided that a goat-cheese serving should be 1/4 cup. Figured based on 3-cup yield.
You can make this vegan cheese-y appetizer as a spread in no time, or let it set up into slices. I like it both ways and hope that you will, too. This is good with sliced fresh baguette, or serve it with whole-grain or gluten-free crackers or crispbreads. Itís also quite nice served with chunks of red bell pepper and peeled celery cut into short sections. Grapes served in small bunches on the side add a nice flavor balance. Happy Valentine's day and day 1 of love your oatmeal week! It doesn't matter if you're making this for your special one or as a special treat to yourself - you can't go wrong with coconut, almond, chocolate oatmeal.
