This is great with the reserved braising liquid from my Cod with Tangerine Braised Fennel and olives. And you really can't go wrong with scallops and bacon.
This is a wonderful light tasting dish with a Mediterranean feel. The prep and active cooking time is quick and then you have a solid half hour to work on side dishes such as couscous and a spinach salad with pomegranate vinaigrette.
A simple version with only onions, but you can use leeks in place of up to 2/3 of the onion in the recipe for a more traditional version.
A festive red apple sauce that came from Mom. The pear adds a twist to regular applesauce that keeps it interesting.
