Stovetop Granola

I found this recipe on Allrecipes.com, it was pretty calorific, so I tweaked it to make it more figure friendly. Add whatever nuts, dried fruit etc you want to spice it up a little.

Avocado Mango salsa

Slightly spicy avocado mango salsa with a hint of wasabi and ginger. Goes great with fish or chicken!

Caribbean Johnny Cakes

Yummy little rounds of fried dough, can be split open and stuffed with things, or eaten as is. Add different spices to make savory or sweet. Prep time includes 30 minute resting period.

Spiced up rice and beans

Brown rice and black beans are cooked with veggies, for a jazzed up version of rice and beans

Salmon Burger

Canned salmon is mixed with red bell pepper and parmesean cheese for a low cal, tasty burger.

Mexican Calzone

Ground beef, peppers and onions are sauteed together with cumin and chili powder, then mixed with crushed tomatoes. Finish with a blend of Mexican style and mozzarella cheese, for a perfect cheesy filling.
Prep time includes 1.5 hour dough cycle

Fluffy dropped or rolled biscuits, perfect for breakfast or to accompany any meal. Use whole wheat flour to make them more healthy.

Cheesy Taco Dip

Ground turkey and fat free cream cheese combine with traditional Mexican spices and cheddar cheese in this baked, ooey gooey dish. A hit at any party!

Canadian Pizza topping

Bell peppers and Canadian bacon over a little sauce, smothered in mozzarella cheese.

Green Thai Curry

Peppers, eggplant, chicken and onions combined with a green curry coconut base, served over hot basmati rice. (I left out the rice, curry paste, fish sauce and lime juice from the nutritional info)

Wonton Soup

Pre-cooked low cal chicken wontons (left overs from another night) stirred into hot Asian style broth to create a yummy soup from leftovers.

Thai Spring Rolls

Ground turkey instead of pork is used to make delicious spring rolls

Firecracker Shrimp

Shrimp dredged in spicy thai sauce, wrapped in wonton wrappers and deep fried
