I had the Sea Monkey Grilled Fish Tacos on a recent trip to Puerto Vallarta - grilled mahi-mahi (I think?) topped with shredded cabbage slaw and served with a spicy sauce on the side - probably the best fish tacos I've ever had. Seriously, they were so good that I was inspired to create my own "copycat" recipe so I could enjoy it at home!
Modified from the Biggest Loser recipe, this yummy chicken dish combines the kick of tarragon with the cooling flavors of cranberry sauce and goat cheese!
Serve with steamed vegetables to make this a complete low fat meal and drizzled the remaining glaze over the vegetables. Also would be wonderful over rice.
Growing up, I always loved my mom's baked bean recipe. For Christmas this year, I asked "Santa" for my very own beanpot complete with a copy of Mom's recipe!
This colorful dish is around 300 calories per serving and is verrrry filling!
You will likely have extra stuffing than what will fit in the 10 peppers, but you can always heat it up and serve over greens for a great leftover lunch!
I use organic pizza sauce, cheese and veggies to make it even better. Tandori Naan flatbreads are all natural, though not organic.
Who needs a late-night drive-thru run when you can make this low-cal version of a Taco Bell favorite at home? Roll up your sleeves, chica, and get busy!
