I ended up with 24 small pancakes from the recipe.
This is a really flavorful vegan slow cooker recipe. Try it over barley, with polenta, or on top of mashed potatoes. You can do all the steps the night before, turn on your slow cooker on your way out the door, and come home to a delicious comforting meal on a cold night!
I've made this with either Hubbard or Butternut squash. The Hubbard has a wonderful flavor, but the hard skin makes it very hard to work with. The Butternut squash is easier to work with, and also has a nice flavor.
If you think you don't like kale, try this recipe. I've never met someone I couldn't convert. And yes, this recipe has some fat from the coconut milk and cashews, but it is the GOOD FAT, and you need to spice up your menu every now and again. You can serve it with a low fat vegetable curry to balance the high calorie load.
