This is a take on a comfort food with a healthy twist.
I developed this recipe (and others) for friends who celebrate Chanuka. The oil is am important symbol of the celebration which celebrates when one day's worth oil for the lamps in the temple lasted eight. Fried foods are a big part of Chanukah. Don't skimp on the oul listed. I have reduced it considerably from traditional recipes. You can add more or less onion depending on your tastes.
. This soup is good with a delicate flavor. It would also work well with chopped kale. I went to a class on making soup years ago. The chef taught us to put grains and greens in the bowl and add hot soup to avoid mushy grains and greens.
I made up this recipe to have a filling and warm breakfast that was a change of pace.

Mix all ingredients in a food processor or blender. Serve with veggies, pita wedges, or crackers.
