This is a great snack with about 93 calories and only 3.3 grams of fat. I like to make the cream cheese mixture a head of time and keep it separate from the tortillas. When I want one, I spread 2 T of the cream cheese in a tortilla and enjoy.
Serves 4, 2 cups each
The orginal recipe calls for zucchini instead of summer squash. I personally like summer squash better (I think it is more flavorful), but feel free to switch them out. Also this soup is very good with a little bit of shredded parmesan cheese sprinkled on top.
