Beef Stew

This is a family favourite and a comfort food. Although it's called stew I find it more like a soup. Serve with crusty rolls and a green salad.

Chicken Pasta Primavera

This recipe is from "The Carb Lovers Diet". I was very surprised how much I liked this and how filling it was with only 1 chicken breast and 1/2 cup of dry pasta for 2 people.

Seafood Chowder

Love this. Found it on Recipezaar ages ago, tweaked it a little and this is what I ended up with. Much lighter version.

Slowcooker Chicken Chili

Chili is not a favourite of mine but I do like this recipe. The sodium is listed higher then it actually is because I use canned black beans but I drain and rinse them, I don't use any of the liquid.

Glazed Chicken with Cashews

Got this recipe from a cooking class I took and it became a family favourite.

Chicken Chow Mein

Very nice. For a change you can use pork instead of chicken and beef broth instead of chicken broth.

Shrimp and Pasta

Very simple but delicious dish.
Note: I only added 1 oxo pk to the sparkpeople ingredient list instead of the two in the recipe because it's only used for boiling the pasta and then discarded. I figured it's adding some salt but your not eating both pks.
Note 2: I decreased the amount of olive oil to 1 1/2 tbsp. in the sparkpeople ingredient list because there's always extra oil left behind from marinating and cooking, therefore you're not consuming the full amount in the recipe.

Pork Stir-Fry with Sweet and Sour Sauce

I found this recipe in "500 Best Healthy Recipes" and it was excellent. Very nice combinations of flavours.

Healthy Fettuccine Primavera

Found this recipe in "Country Italian" cookbook. Feel free to use whichever veggies you like. The recipe simply calls for 4 cups assorted veggies plus tomatoes so I used what I like. I did find it a little bland, may want to cook pasta in chicken broth or add substitute a little chicken broth for some of the milk.

Black Bean Fudge Squares

I found this recipe in a "Clean Eating" magazine and I have to say I was intrigued to try them. I followed the recipe exactly as shown except I changed the serving size from 8 to 12. OMG! They are really good. They are a little crumbly and stuck a little to the pan but they tasted great.

Quick Tuscan Bean, Tomato and Spinach Soup

This was pretty good and very simple.

Potato Cheese Casserole

This recipe was good but not great.

Chinese Beef with Crisp Vegetables

I found this recipe in a healthy cookbook and found it very good and tasty.

I found this recipe in an italian cookbook, I made a few modifications and this was the result.

Chicken a la King Wrap

Found this recipe in a "Clean Eating" magazine. Looked interesting. Odd to have this in a wrap but it was good.

Hearty Carrot Muffins

Found this recipe in Reader's Digest Healthy Heart book. The idea of a 120 calorie was muffin was too good not to try.

Coconut Crusted Mahi Mahi

Found this recipe on Spark but tweaked it a little for personal preference. Also, you don't use all the flour, egg and coconut so I accounted for that in the nutritional ingredient list.

Slow Cooker Potato and Corn Chowder

I found this recipe on Recipezaar. I changed it a little to make it more healthy and to suit personal preferences. I use low sodium canned goods when available.

Mediterranean Catch

The recipe calls for 2 lbs cod but due to loss of water when cooked I entered 24 oz instead of 32 oz into ingredient list for nutrition. I use the generalization that 4 oz of raw equals 3 oz cooked.

Not Ribs Ribs

Saw this recipe on a cooking show, "Fixing Dinner" I believe.
Served it with brown rice and asparagus. It was good but very salty. May try with pork next time and not sure what to do to limit salt.

Lemon Cheese Coconut Cake

This is NOT a low fat or low calorie recipe. Made this for a friends birthday and wanted to know the nutritional info. Found the recipe in a Company's Coming - Decadent Desserts

Lazy Lasagna

I found this recipe in a Company's Coming book. This is like lasagna but may be even better with a different noodle, maybe penne.

Chicken Pizzola

I found this recipe on recipezaar but I tweaked it a little. Serve with crusty bread (garlic bread is great to) and a salad.

Chicken Soup

Simple, but great, soup. I use leftover roasted chicken.
