This is a simple dish that can be made with any firm white fish and any veggies you have on hand. I used monk for this recipie because it is what i had on hand.

This is a simple and tasty dish. The fresh salsa is good by itelf or on tortillas also.

Quick Taco Soup

this is a great soup to make with leftover chicken or those quarter bags of frozen veggies that build up in the freezer. We serve with with tortilla chips on the side an a bit of sour cream. But i did not include that in the nutritional info

this sounds deceptively simple and very easy...and it is. Its also delicious. My mother gave it to me and I was hooked the first time i made it.

Leftover Szechwan Pork

This is a simple and deliciously easy dinner. It makes quite a bit and it great served over rice noodles or rice or just by itself. I make it with leftover Pork tenderloin but it will work with beef or chicken as well

Crockpot Southern Pulled Pork

This is a great dish for a summer picnic or party. Its easy to prep and tastes delicious. I serve this over pita's or rolls but i did not include a bread in the recipe calculations. This makes a ton of food. I calculated this with 16-4oz portions.

Easy Asparagus Bundles

This is a simple and quick dish for any occasion. It looks and tastes great! Its a wonderful side for when guests come over. You can use any type of bacon. I have used normal breakfast bacon in the past but have found that I prefer turkey bacon or meatless bacon for the same result and less fat.

Braised Slow Cooker Pork

This is a simple one pot meal. We serve it over spaghetti squash.

Souvlaki (marinated pork kabobs)

This is a non traditional Souvlaki recipe that my family loves. you can grill it or broil it. I like to serve it with home made tzatziki sauce (not included in this recipe). You can also make this with lamb.

My family loves fish but salmon was never one of our favorites until we discovered this simple recipe. It is great grilled or baked.

Coco Grilled Chuck

This is an easily prepared dish that tastes great!. You can follow the directions as is or rub and cook immediately. I let the rub soak in for added flavor.

Broiled Blue Fish

This is a simple and delightful dinner. Almost any mild flavored fish will work. You can also substitute the laughing cow cheese for an herb ed low fat cheese of your choice.
