I serve as a main dish with brown rice, since it is a little saucy for a side. It is a sweet version so the kids love it. For a heartier version I sometimes mix in cooked italian sausage or cooked ground pork or cooked chopped poultry. It is pretty high in sodium - have thought about trying tomato paste rather than ketchup but haven't done it yet.
They freeze well, and we like to eat them with yogurt and fresh fruit, but the occasional serving of real maple syrup makes a nice treat. Nice snack rolled up with peanut butter. Don't expect light, fluffy pancakes with this recipe, due to lack of gluten in buckwheat flour - they are slightly heavier and more chewey than all white flour cakes.
Can't recall where I got this recipe, years ago. A different take on hummus & no olive oil included.
cooked with nutritional yeast - same recipe is great with kale, collards and mustard greens
dip, topping for meat, fish, sandwiches - used to love this on french fries and potato chips, but just as good with fresh vegetables.
