Adapted from Quinoa a la Tricotine, I ran out of quinoa, so included couscous. Also added more veggies.
Different variation of my hummus recipe; less garlic. Red pepper and Paprika added, no tahini or olive oil
A mix between "Quinoa a la Tricotone" and a recipe I found for "Quinoa Tabbouli". Since I missing ingredients for both recipes, I just improvised.
Recipe borrowed from Jenna from Eat Live Run blog which she adapted from Oh She Glows bars.; didn't include the hemp seed.
Rather than letting the bread soak, I just make sure the surface is covered before sticking the bread on the skillet. Quick and easy to prepare, this breakfast sticks with me all morning long!
(Note: I usually enjoy this with a little bit of Organic Pure Syrup and 1/3 of an apple.)
This came from eatingwell.com; I decided to use spices I had on hand, which included curry rather than coriander and cumin. Feel free to experiment with your dry rub!
I served this with couscous and steamed veggies and several lunches worth of this.
