Serve with harvest grain rice or stuff in a pita or other sandwich bread.
Cook up/shred chicken I used 3 breasts
1 15 oz ish can of black beans rinsed
2-3 tomatillos diced
Put as much spinach is as you want I do 50/50
I spread cream cheese on one inside of pitabread and sauteed a little garlic in butter and mixed with Zoi nonfat plain yogurt on other side.
*Other option is to serve as a side with Harvest rice cooked in chicken boullion (2 cups dry) and served with a side of broccoli. I did not put in spinach to this dish.
1/2 cup frozen blueberries
1/2 cup frozen strawberries (4)
1/3 cup vanilla yogurt
1/2 tsp vanilla
3/4 cup water ( start with 1/2 if using fresh fruit)
You can absolutely sub in Ap Sauce or pureed Great Northern Beans for the oil and it is awesome- also I usually substitute 1 cup wheat flour for the white.
