Chard is a beet which has been cultivated to develop the leaves instead of the roots. Strip off the leaves. Boil and dress like spinach. Slice fleshy, delicately-flavoured midribs and boil in salted water. Drain and serve with melted butter. Delicious with fish, white meat or crusty bread.
This is nice with grilled or cold meats or a fresh green salad.
