This light and refreshing soup is perfect for hot summer days or nights!
You can't taste the spinach...it just turns it green! This is fantastic when you have that peanut butter and banana craving.
Great on a sandwich or as part of a salad. Not too wet or too dry. If you need a little more mayo, it is only 15 calories per Tablespoon and very low in fat.

This recipe was born out of what to make with leftovers. I had LC light cheese stuffed turkey burgers, cauliflower and broccoli from two different nights and decided on this. It turned out surprisingly good. Definitely a keeper.
