Recipes I've Shared:

Berry Refreshing Smoothie

Makes approximately 3 one cup servings

This is also totally yummy adding pineapple and banana and a little more soymilk. If you do this, add the extra items into your nutrition values and consider it another serving added to the recipe. ;D

Berries should be fresh or frozen unsweetened
(You could also get a mixed berry blend in your frozen food section and combine them as 2 cups.)

Bean Salad

This is a great dish for a potluck!!

Salsa & Black Bean Shredded Chicken

So versatile and delicious!!
I always make this large of a batch because we hae it one night over rice, another night folded into a burrito, and another night stuffed in bell bell peppers!! YUM! ;D

Pumpkin Spice Squares

This has the texture of a cakelike brownie and is so YUMMY. Nutrition values is determined by approximately 2" squares baked in a large cookie sheet pan. 7pcs long by 5 pcs wide.

Grilled Cheese with Wheat Bread & no butter

This is quick and EASY! Here is a healthier alternative to the standard. If you want to just have a hint of cheese, only use one slice. (This takes off 78.8 calories, 606 grams of fat, 300mg sodium, .3g carbs, & 4.7g protein) I like the added protein and cheesy taste and this fits into my meal plan just right. ;D

This is really good with Tomato soup, too! YUM!

Summer Squash & Zucchini Bake

This is a nice way to spice up squash & zucchini into a delicious side dish. (You might want to try adding mushrooms to the mix, too.)

Spaghetti Meat Sauce

This is a recipe that is supposed to be like the meat sauce served at Vince's Spaghetti in Southern California. It was published in the Press Enterprise several years ago in Riverside, CA and has become one of our family favorites. I give this information because I did not come up with the recipe and want to give credit where it's due. Published in a newspaper... Is that copyrighted? You decide.

I'm going to try this served over wheat pasta and use leaner beef now that I'm being more conscious of what I'm eating. This will be an occasional treat for the family. ;D
