5 meats 5 veg thick camembert crust pizza

Yummy, healthy kid pleaser with the dieter in mind.Makes 2 large pizzas or Can be made in singles pizzas (makes about 6) and frozen either cooked to microwave, or uncooked to bake later. Camembert cheese in the crust makes it that the kids will eat the whole slice, but can be omitted to make the pizza lower in fat. Much more satisfying than a thinner crust variety. Can also add other things like drained small pineapple pieces or sliced black olives, but have omitted these to keep cals lower. Recipe can be doubled or halved. Can also cook the singles in a camp oven if placed on appropriate sized tray and kept of the bottom of the camp oven. Hang on tripod over flames. Don't have fire to hot

Roaste half- shell scallops with marinated summer vegetables and herb and lemon oil dressing

A beautiful entree or light meal for a special occasion for scallop lovers. Definitely NOT a diet food but at least its sparked for easier calculation. Great one for valentines day to or anniversary meal.
*Orange Blossom Water is available from specialist food stores and middle eastern grocers
** Lemon Oil is available at specialist food stores and mediterranean grocers.

Really yummy recipe which impressed the whole family. Something different to cook if your a taco lover whos a bit sick of tacos. Can vary the heat by adding more or less chillis and top with different toppings or none to personalise.

Herbed cottage cheese baked potato

Sundried capsicum can be bought dehydrated. To reconstitute, soak in warm water for 20 mins. Otherwise by them in oil and rinse well before using

Fresh Garlic Calamari with Parmesan

It's very important for this recipe to have really nice tomatoes, very fresh and good quality parsley and is nicer with larger , thicker calamari tubes
NOTE :- To peel a tomato boil enough water to cover a tomato. With a knife cut a cross on the bottom of the tomato, then place tomato in the boiling water for 1 minute. Put the tomato straight into cold water to stop it from cooking. This makes the skin much easier to pull of the tomato.
