My mother was married to a wonderful man, Bart Shishmanian. He was a great father figure, and a wonderful Grandfather. He taught me how to fix this wonderful Rice Pilaf the first year they were married. My kids absolutely love it. I haven't tried to make it substituting a lesser fat product. Years ago, I learned that I could make scrambled eggs using water instead of milk. I have learned that if I season the eggs with onion and garlic powder and salt and pepper, they take really good.

Original recipe calls for 8 servings, but I use 4 because normally, we don't have anything else with tacos.
I use chicken broth, or any other broth on hand to saute in place of butter. You can also use water instead.
The prep time is short due to the fact that I had two cups of chopped turkey in the freezer.
Pre heat oven to 350 degrees. Use a 9x13 inch pan. Each serving is 2 Enchiladas
I love to make tasty and easy dinners using my crock pot. The recipe calls for beef flank steak, but London Broil can be purchased at 1.79lb. so, that wins out.
