Adaptation of the "Black-eyed Pea" restaurant's version.
Very delicious and so easy! I serve it with mini croissants for showers, brunches and picnics, It is always a big hit and is requested by my friends and family often. It can be made even lower in calories by substituted the mayo with Greek style yogurt and dijon mustard.
My Mom used to make this all the time before fat free and low fat products were avalible. I have lightend up her ingredient with todays healthier products with a close rendention of her classic.
Lower fat & calories then the original classic when turkey sausage is used, also low sodium vegtable stock can replace the low sodium chicken stock for an even healther version
Very tasty, my hubby who only likes fried fish slathered in tartar sauce loves this dish!
