This is derived from/inspired by a recipe I found on allrecipes. I increased the amount of spinach and added the olives, sun dried tomatoes, and feta.
This popular dip is lightened using light cream cheese (neufchatel) and nonfat yogurt. The serving size given is per one ounce (by weight) so you can easily multiply by the amount actually consumed.
I copied down this recipe years (decades) ago. It was purportedly a spa recipe, but I don't recall which one. At any rate, it is tasty!
This recipe uses the quantities for making "12-14" pancakes listed on the box, but the my yield is 8 large pancakes, serving size 1 pancake. I use a medium size ice cream/cookie scoop to portion the batter.
