This is a very simple spinach recipe that even my greens-hating boyfriend will eat. The parmesan cheese can be reduced for a more low-fat option. I've had gruyere and parrano on this as well and it's amazing! I usually just season with salt & pepper but I've added garlic powder, green onion, and italian seasonings as well.
This is a very versatile recipe with substitutions that can make the cookies tastier or healthier, depending on the ingredients. The ingredients in the recipe are, in my opinion, the best combination of taste and nutrition. They can certainly be healthier or tastier, but that's up to you. I've tried many of the alternative ingredients and think they all work well. Enjoy!
