Using leftover meat, rice and beans from my enchilada recipe, this is a high protein filling soup with few calories!
Serves 8!!! Number of servings says 1 as that is the nutrition info for one plate of food as described. Sorry for the confusion.
By combining super lean ground beef, ground turkey and TVP, I was able to come up with a supper that had a full meal of calories and protein to keep me going and fill me up. Add the brown rice and black beans to the side and I have a nice plate of Mexican food!
