I came up with this recipe one day when my kids invited friends for dinner and I'd only thawed out one pound of ground beef. Everybody loved it so much, they asked me to make them this way every time! It's also a great way to sneak in some extra fiber :) My sons like to add guacamole, but that's not included in the calorie count.
