This recipe doubles easily and freezes really well. I made a double recipe of beans and froze half by themselves, adding rice when ready to eat so that it didn't get mushy and the dish kept some texture. Make sure to have extra fresh cilantro on hand!
Quick and easy to make and a total hit with the kids. Serve with baked scoops for a great low fat crunch that kids love making "baby tacos" out of.
Reminds me of growing up. Definitely a comfort food!
