I love this salad because it is an easy way to use up the last of veggies that are about to go bad. It is also a fun change from a regular salad. (You can use any of these ingredients, as well as fresh peas, cauliflower... anything crunchy. Any combo of 4 or 5 ingredients will taste great.)
You can substitute vegetable broth or beef broth (for 2 boullion cubes and 2 cups of water.) This recipe does not need to be blended, but it is more appealing to kids when it is.
You can substitute tofu for the pork and use whatever vegetables you have on hand. This is one of my economy meals because I can use up leftover pork chops or roast, and the stalks from broccoli. (Peel off the tough outer part of the stalk and use the soft inner flesh.)

A simple and delicious salad that combines two garden favorites. This is the best replication that I can come up with for "Choban Salad," which I have had in Turkey and Azerbaijan.
This is a simple way to dress up apples. Use it to top hot cereal in the morning, or all by itself. Best with tart apples, but any apples will do.
Also tastes great without the nuts.
