My M-I-L buys LOTS of fresh fruit every week and it always goes off before we can eat it. So I've started using it to make a fresh fruit salad to take with me to work for a morning snack or as an addition to a plain sandwich lunch.
The lemon juice in the recipe helps keep the apples and bananas from turning brown.
I used to make these for my children when they were small using tuna. My hubby loves fishcakes but can't eat tuna. He suggested using this salmon and mackerel and it makes a great mix.
Serve these with a salad and some chili dipping sauce and you have a great, quick meal.
I used to eat soy sausage patties for breakfast all the time. I can't find any I like here in the UK, so I came up with my own and they taste great!

I have a blackberry bush in my back garden that has provided me with an abundant crop this year. While I have no objections to sharing them with the birds, I needed to find a way to use my share. My mother in law suggested this combination.

This started out as Steak and Ale pie. I simply substituted turkey thigh pieces for the steak. My hubby thinks mine is better than any he's tasted at the local pubs.
