Roasted Red Pepper and Lentil Soup

This is a really delicious, richly flavored soup. It's a great accompaniment for most any meal. Perfect for a cold, rainy day!
There are lots of options in terms of flavoring this soup. Don't like fennel? Leave it out! Love rosemary? Add some more! Always taste your soup and add whatever you think is necessary, no soup should ever be bland!

Chicken with Orange Miso Sauce

Ignore the fact that the ingredients say strawberry jam! You should use Smuckers Sugar Free Orange Marmalade. I was just too lazy to put in something with the same nutrition info but a different name!

If you have it, use a sweet, citrus-based vinegar for the sauce. If you don't have one, a rice vinegar or apple cider vinegar will work as a substitute. I steamed the chicken, but you may bake it or throw it in the slow cooker (though probably on low as honey has a tendency to burn).

The only problem is that I didn't really measure as I threw things in the saucepan! These are only rough estimates. Go by your own tastes; if you think it needs more or less of something, by all means, make the change!

Slow-cooker Pork Tenderloin with Apples and Acorn Squash

If you can find it, a specialty cranberry vinegar is a delicious accent to this recipe. If not, cider vinegar will work fine as a substitute.

Better 'n Chocolate Pudding

This is a great recipe if you want a super quick yet satisfying chocolate treat. I usually split it into two servings, but with only 150 calories, not to mention the probiotics of yogurt, no fat, and a whopping 25 grams of protein, you could easily get away with having a piece of fruit and some toast on the side and turning this into your breakfast!

Simplest Corny Cornbread

I've been trying to create the perfect cornbread. I think I'm almost there! The whole wheat flour gives it a nice density but with just enough cornmeal to create the perfect crumbly texture. My ultra-picky boyfriend downed four pieces of this at dinner! The recipe is very simple; I whipped it up in about 10 minutes.

Don't have any buttermilk around? Simply add a tablespoon of lemon juice to 1 cup of milk, wait 5 minutes and use. You can also easily substitute an egg for eggbeaters, butter for margarine, or sugar for Ideal if that's all you have around. Just be sure to adjust the calories accordingly. Enjoy! Pumpkin Ricotta Custard

The great taste of pumpkin pie, the lightness of custard, a super simple prep, low fat, low carb, vegetarian, gluten free, and only 75 calories per serving...you can't get much better than that!

Low Fat, Low Sugar Banana-Strawberry Muffins

The strawberries add enough bulk to make 10 generous sized muffins that are not even 115 calories each! They are also made with whole wheat flour, and without sugar, butter or oil, resulting in a delicious recipe that you couldn't feel guilty about if you tried.

If you do find that it isn't quite sweet enough, adding 1/4 cup sugar to the flour mixture in the beginning will only increase the calories to 133 per muffin. Enjoy!

Slow Cooker Curry Chicken Thighs

I used chicken thighs because I prefer them but this could easily be made with boneless, skinless breasts as well. I would recommend cubing the breasts, however, and cooking them on low for 6-8 hours rather than high for 3-4.

Mango Tomato Salsa

This salsa is very simple to prepare but rich with flavor. It is fantastic with fish but it can be used on chicken, tacos, salad, or even plain.

Note: One of the key ingredients is the chipotle paste...You will need to buy a can of chipotle peppers in adobo sauce and puree them in a blender or food processor. Stored in a glass container, the paste keeps for weeks and it goes great in just about anything! Add it to sandwiches or tuna for an extra kick, or in sauces and marinades.
